In my opinion Gatsby changed his name to, in a way, create a new man. He had become obsessed with becoming wealthy after working for the rich man he met on the yacht. He wanted to move away from his past when he was poor and insignificant in the world. Changing his name might have been a way of starting his life over and getting a fresh start.
I think that James Gatz had big dreams and wanted to live a rich and extravagant life. The only problem was he was poor and plain, so when James met Mr. Cody he realized he could live his dream life. As the "final transition" into this new life style he decided to change his name.
I agree with Emily in the sense that Gatsby changed his name to create a new identity. He wanted to be someone different then who he was, and changing his name helped him become this new person. He also may have done that so his past would remain mysterious, because no one would know his real name and therefore wouldn't be able to figure out his past.
